Bailey Family Peanut Butter Pancakes


Anyone like peanut butter? How about pancakes? Well then I have a great recipe for you. This recipe has been in my family for years and years through my Grandma Ethyl's side. I make it almost every weekend for my princesses and they love it, as do I. We even have them when we go camping. Though the traditional pancake has some type of syrup poured over it, this is no traditional pancake. Sweet tooth is required...and a glass of milk. For these pancakes we make a special batter and a peanut butter dipping sauce. When you eat it, you merely tear pieces off and dip it into the peanut butter sauce. Super delicious! You must try them!

Ingredients:

For batter:
1 cup flour
1/2 cup sugar
1 Tablespoon baking powder
3/4 cup milk (add more if needed for right consistency)

For sauce:
1/2 cup creamy Peanut butter
1 cup water
1/4 cup sugar





1. In a small saucepan add water and 1/4 cup sugar and stir. Bring to a boil over medium high heat. You are creating a simple syrup here.

2. Preheat skillet over medium heat. I find that the pancakes cook best over medium heat and tend to burn any higher. Also, having the skillet preheated helps to cook them faster, especially the first couple batches.

3. Next, mix flour, sugar, baking powder and milk. Add milk slowly and add more to get the right consistency of a traditional pancake batter, not too thick but not too runny either.



4. Lightly spray skillet with an oil spray and pour in about 1/4 cup of batter. 


The pancake will get a lot of bubbles on the top. Once they begin to pop and the edges start to look done, carefully flip the pancake and cook on the other side.



5. Meanwhile, once the simple syrup has come to a boil. Turn it off until you are ready to make the peanut butter sauce. In a bowl add the peanut butter and 1/4 cup of the simple syrup that you made. You can add more if it's too thick. Sometimes I make the sauce thinner. Sometimes I make it a little more fudgy consistency.



6. The sauce will not look right at first. Have some faith. Mix it with a spoon and just keep stirring, just keep stirring (I keep hearing Dorie from Finding Nemo singing "Just keep swimming, just keep swimming" as I write this). So anyway...let's focus...


7. Here's what the sauce will look like when it is ready. Serve a dollop of this on the plate next to the pancake, make sure your hands are clean and enjoy!
