Homemade Potato Chips

Okay, so I don't know about you, but I LOVE the homemade potato chips from Famous Dave's restaurant. They serve them up with their homemade barbecue sauce and are so delicious. So, I had to try my own at home since the closest FD is at least 30 minutes away. I paired this with my own homemade barbecue sauce and man are they good!!

Ingredients:
1 potato (preferably a baking potato or Idaho potato)
1 bottle of vegetable oil

1. Fill a small pot with vegetable oil. It should be a couple inches deep. Turn burner on medium high.
2. Wash the outside of your potato(es).

3. I use a mandolin and set it on the lowest setting.

4. Next just slice away... Here's what it looks like. Now, if you prefer a thicker chip by all means, go for it! I do make them a little thicker sometimes, BUT it WILL increase the cooking time to get that crunch.

5. Pat the sliced potatoes dry with paper towels to remove excess moisture.

6. Now if you are not used to using a thermometer (like me) then here's a method I picked up from the Food Network. Stick the handle of a wooden spoon in the oil and if it bubbles like this, then you're good to go :)
7. Next drop in your chips one at a time so they don't stick to each other. I did about 20 in a batch. It took 2 or 3 batches to finish at just a couple minutes. I use my tongs to flip them and push them down in the oil. Remove from oil to a bowl lined with paper towels to drain. Immediately sprinkle on a little salt while they are still wet.

8. Here's the amount of chips I made from using one potato. A perfect snack. Not so healthy, but very yummy! And don't forget the barbecue sauce!
