Weci's Tacos

Okay, so today's recipe is from my Momma, Weci (pronounced wee' see, short for Louise). She and my Dad met at a Mexican restaurant called Famous Taco in Michigan where she learned how to make her own tortilla chips, nachos, tacos, burritos etc.. This was a staple in my home growing up and is still a staple in my own home. My kids love them! Which is great :) I usually serve them with Knorr Spanish Rice.

Tacos
1lb. ground beef
1 small onion, diced
2 cloves garlic, minced or pressed
2 T. chili powder
1 1/2 tsp. cumin
salt and pepper to taste
vegetable oil
corn tortillas

1. Begin by browning ground beef and sauteing onion and garlic. Next add spices. Continue browning until cooked through.

 2. Drain. Next, in a skillet add vegetable oil to about 1/2 an inch deep and heat over med-med/high heat.

 3. When the oil bubbles like this around a wooden spoon handle then the oil is ready. Be careful not to heat the oil too hot. Remember, this process is very quick. Insert corn tortilla into hot oil.

4. Use tongs to press tortilla down in the hot oil for a few seconds..and by a few I mean like 2 or 3 depending on how hot the oil is.

5. Using tongs, fold tortilla in half pressing down to make sure the inside is cooked. Flip over to the other side. This process is about 20- 30 seconds. You don't want to cook too long because if it's too crispy the shell will just crack in the middle when you bite into it. You don't want to cook these as long you cook a tortilla chip. It will take practice but is not difficult. You want them to have crunch but still be tender. My mom is the best at these! Sometimes I get it right, but no matter what, they are delicious.

 6. Here are the finished taco shells! Aren't they pretty :)

 7. Now, let's build us some tacos! Here's a tip I use: put the sour cream on first..it acts like a glue for the meat and you get sour cream in every bite!

Tips Tuesday: Getting Those Picky Eaters Less Picky

No, I'm not working for tips...although I did years ago...I mean advice...I decided to start giving out some tips that I have learned along the way as a Mom. My methods are not perfect and as my Dad always said "you girls didn't come with an instruction manual". SO, I thought, "Hey, why not share my advice?" If you love it, then use it, if you hate it, leave it on the shelf. You don't go to the market and buy everything in the store right? So if you don't need what I'm giving, just leave it :) No offence taken.

So here's my first tip:

Getting those Picky Eaters Less Picky

Okay, so do any of you have a picky eater on your hands?? Well, I do and not just my kiddos either :) (however this method doesn't exactly work for the full grown humans). Anyway...I read once, years ago, in a parenting magazine (which I'm not a big fan of those, the Bible's my guide but that's another story...sometimes you can actually find good advice in them) that it can sometimes take a child up to 12 times to have a food introduced to them before they will actually start liking it. REALLY?? Did you say 12?? You meant 5 right? Wrong. SO I decided it's worth a shot. My real challenge has been my Princess5. She likes everything to fit in her little box and doesn't deviate for a minute. So what I did was start with one food at a time. Broccoli...mmm. I gave her broccoli and made her eat one bite. Just one. She did, with a look like she was going to gag and not going to make it. BUT she did. The next few times I only made her eat one bite. THEN..uh oh....here it comes!...TWO bites....She did it again, not so disgusted this time but still not at all happy. After awhile I increased it to THREE. (We don't eat broccoli every night folks so this process takes awhile. In the mean time you can start another food too...just maybe not do both foods in one single night.) Finally, I gave her three pieces of broccoli and said she had to finish it whether she liked it or not. I know, I know..I'm a terrible Mom...my kids don't walk all over me...SOO finally...one night at dinner...SHE asked ME for broccoli!! Are you kidding??? Who are you and what the heck did you do with my daughter? She loves broccoli (or trees and DH and the princesses call them to be silly)! So, while this doesn't work like clockwork...it has worked quite a few times with Princess5..broccoli, mashed potatoes, nachos, and more. She is still a work in progress but that's good enough for me! Love that girl...Princess2 is a garbage disposal so I haven't had to worry so far...fingers crossed!

Homemade Tortilla Chips

Okay, so here's my recipe for homemade tortilla chips. If you've ever been to an authentic Mexican restaurant y'all know that the chips and salsa are one of the best parts right? Well, my Mom and Dad actually met working at a Mexican Restaurant in Michigan called Famous Taco. I'm not sure if it's still around(if it is, let me know) Well, Mom learned how to make her own chips and tacos and nachos from that place. Those recipes will come later ;-) So in my house, we make our own tortilla chips and taco shells. For this recipe, I'll show you how to make your own tortilla chips. There's nothin like em!

Homemade Tortilla Chips

Ingredients

Corn tortillas, quartered
vegetable oil
salt (to taste)

So first thing's first, get your oil preheated. You'll know if it's ready if you drop a chip in and instead of sinking to the bottom it bubbles and floats to the top. Sometimes you can also tell if it's ready if you put the handle of a wooden spoon in the hot oil and if it bubbles around the spoon, then it should be ready.

Quarter the corn tortillas like this. It's important that you use corn tortilla's not flour. You will not get the same results. Flour tortillas are good for fajitas and burritos, corn are good for nachos and tacos

Place about 10 or 12 chips in at a time using tongs push them down frequently to get them fully cooked with oil and turn them over. This should only take a minute or so if the oil is hot. When they start getting golden and stiff then take them out. This part has a learning curve along with it. The more you do it, the more you'll know when they're done. The chips will cook a little bit longer after removed from the oil so make sure you don't cook them too long.

Put the chips in a paper towel lined bowl and sprinkle with salt immediately while they are still wet. This will help the salt to stick. Let cool and serve!

Love the hear from you if you make these at your house or if you have any questions or comments!
