Southern Chicken-Fried Chicken

Chicken Fried Chicken? What? Did you write that correctly? Yes. I know it sounds a little redundant but it's like Chicken-Fried Steak. Pretty much anything that is 'Chicken-Fried' comes with a yummy cream gravy. It's breaded and fried the way you make Fried Chicken but you use some of the oil drippings to make the cream gravy. Though it may not be the most health-conscious meal, it certainly is delicious! Everything in moderation right? I wouldn't recommend eating this every night..but on occasion doesn't hurt. Try it! It's amazing!

Ingredients
4 chicken breasts
1/2 tsp. pepper
1/2 tsp. salt
2 eggs
1/2 cup milk

1-2 cups self-rising flour (for breading)
1/2 tsp. salt
1/2 tsp. black pepper
1/4 tsp paprika
1/4 tsp white pepper
vegetable oil or melted Crisco vegetable shortening

3/4 c. milk
3/4 c. water



1. So first, get your heavy bottomed skillet preheated. (Not non-stick) I love my cast-iron skillet. Melt the Crisco or use vegetable oil and slowly preheat it over medium high heat. Oil should be about 1/2 inch deep in the pan.

2. I don't have a picture shown here, but I'd recommend using a mallet to pound the chicken out to 1/2 inch thickness so it is flat and will cook evenly.



3. Next, mix together 1/2 tsp. salt, 1/4 tsp. black pepper, 1/4 tsp paprika, and 1/4 tsp. white pepper. Rub the seasoning on both sides of the chicken.


4. Whisk together the eggs and milk in a low container or a bowl. (I love my Pampered Chef breading set). Season the self-rising flour with salt and pepper. (Remove 3 T. of the seasoned flour to use with the gravy and set aside) 


5. Dredge the chicken in the flour mixture shaking off any excess.


Dip into the egg mixture coating both sides.


and then coat again with the flour. 


6. With a long handle fork carefully place each chicken breast into the hot oil. Fry on both sides, turning once until golden brown.



7. Reduce heat to low and cook 10 minutes covered with aluminum foil or a lid. (I don't have a lid for my cast iron skillet)


8. Remove from pan and set aside to drain. 


9. Meanwhile, remove oil from pan except 2 tablespoons trying to keep as many of the brown bits as possible. Turn skillet on medium heat. 


10. Sprinkle with the flour that you set aside. Whisk together and brown the flour.  


You want the gravy to look like this. Nice and golden brown, otherwise it'll taste like flour, not like the delicious gravy you want.


11. Combine the 3/4 cup milk and 3/4 cup water in a cup. Gradually stir in the milk/water stirring constantly to avoid lumps. 


Voila! To die for cream gravy to serve over your yummy Chicken-Fried Chicken and mashed potatoes.

Rockin with Disney


Today was so much fun! We decided last minute to take the girls to see Disney's ice show Rockin Ever After. Princess6 and Princess9 both had mentioned it multiple times and since they are neither ones to ask for things too often and have done amazingly well in school and are all around just good kids...it was decided that we'd surprise them. So on our family calendar I wrote 'Big Surprise!' on today's date. Of course my detail-oriented Princess6 who studies that calendar and marks off each day noticed immediately. They were anticipating the event for about 30 hours. Last night Princess9 wasn't feeling too hot and all she could think of was not wanting to miss the big surprise. She was so pitiful....so today she kept thinking of things it could be and even guessed correctly but we convinced her she was wrong without lying...something tricky to do with a smart 9 year old. I quietly packed their princess dresses and we loaded up heading down to South Philly.

They still didn't know here :)
I think it made it more exciting for them to anticipate the surprise. I would have hated it. I like surprises but only if you spring it on me. I usually figure it out if I get any type of hint or clue. So anyway...they were so excited when we finally parked and we told them. They had a blast and Princess3 was in awe. She was so cute because Daddy kept asking he questions and she was so engrossed in the show she didn't hear him. I love having kids and being able to do these fun things with them. It's the memories that they take with them. I have to remember that they aren't going to always remember the day to day things but when we make an effort to have a special day whether its just breaking out the china and having a fancy meal for no reason or decorating the whole house on their birthdays...make the days special and they will cherish them.




So excited..Princess6 asked me every couple minutes "How much longer till it starts? How many minutes?" When I told her 7 she was so sweet with her little "Yay!" She's my quiet one and though she didn't jump for joy..she was extremely happy.

I'm Free!!!!


So for the next 60 days I am free! Free to be a mom. Free to be a wife. Free to be a friend. Free to finish my book Uncle Tom's Cabin and maybe even some others. Free to crochet blankets for certain people I love. Free to finish my pallet art that's been sitting on my back porch for the past 6 months. Free to cook dinner at night and Free to lay on my couch and be a bum and watch TV all night if I freakin want to!!!! Insert a very long sigh of relief here....aaaahhhhh....I just got of the phone with my finance and academic counselors who were none too happy to delete my upcoming schedule so I could take a much needed break to recoup and hope that my ulcer goes away so I can start back again in a couple months refreshed....unless I happen to come into a ton of money and Prince Charming and I can start our house flipping business we dream of doing....any takers?? No? Yes? Well, anyway...I'm free to blog to my little heart's content if I choose to. Just wanted to update y'all. Freedom. Love it! Happy Friday!!!
